Trent’s passion for sustainability motivates him to ensure he works with producers who are aware of their impact on the environment, and adhere to cultural and philosophical practices in their productions.

His philosophy is to let the protein be the hero of the plate whilst complimenting it with native produce and a blend of favoured Latin cooking methods.

Trent’s style is inspired by the people, places and produce he has encountered in his travels which has given him an understanding that great food doesn’t need to be complicated.
